Veggie Spring rolls

  
You will need:

  • Thinly sliced cucumber 
  • Thinly sliced red pepper
  • Spinach leaves 
  • Alfalfa sprouts
  • Tofu (marinated in soy sauce)
  • Sliced avacado 
  • Chopped scallions
  • 1pkg. Spring roll wrappers

  
  
To roll the wraps :

Wet the wrapper gently until moist. It should be flexible but not too watered down. 

Center a small amount of each ingredient in the lower portion of the wrap.

  
Starting at the bottom,  roll up the first few ingredients. 

  
Then fold over both sides of the wrapper.

  
Continue rolling the wrap gently but tightly until you reach the top.

  
Slice in half and enjoy!
