Learn to make this Southwest Tex Mex dish. It is simple to make and the filling combinations are endless! Be sure to add lots of cheese! Also in the video is my recipe for a fresh pico de gallo that goes great with these chimichangas!
You will need:
For the Chimichangas
2 cups shredded chicken seasoned with taco seasoning or sauce
1 cup (or more) shredded cheese (mexican blend, taco or cheddar works best)
1 pkg tortillas
For the Pico De Gallo
1 & 1/2 chopped tomatoes (I used tomatoes on the vine for this)
1 chopped scallion
1/4 diced white or red onion (adjust to taste)
1 teaspoon of hot sauce to taste
1 lime wedge
pinch of salt
herbs to taste (I used alot of cilantro, and a few basil and mint leaves chopped up)
